Herbs are often powerhouses of nutrition, boasting higher than average vitamin E and high in active compounds such as phenolic acids and flavonoids. We use several common herbs such as oregano, sage and cilantro but also roots such as ginger and fennel root.

Mushrooms have many health benefits but we like to use them for their vitamin D content as well. Mushrooms exposed to UV light can boost the vitamin content in food so that we rely less on supplements.

A complete and balanced diet can be hard to achieve with whole foods alone, the nutrients that can often fall short include Calcium, Vitamin E and Zinc.

Kelp, or seaweed contributes to the calcium, iodine and trace minerals in our diets. It can also contain EPA and DHA.
